The light from the sun was giving way to the darkness, much like the great American dream. With my accomplice beside me, we prepared for a night of mayhem as we drifted into Marilyn’s bar. Although in Broadbeach, we thought we had stepped into 1970’s Las Vegas. There was no doubt that we needed a drink. A drink right away. Were we in Las Vegas? We needed to think straight. Once we sat down everything changed. The place had this mesmerising allure, a peculiar ability to instantly make the guests feel at ease . We were ready to enjoy the night, knowing that we were somewhere special…
A true fan of Hunter S Thompson, I felt an innate desire to visit a bar inspired by the author’s famous work, “Fear and Loathing in Las Vegas”. The book depicts a journey of excess through 1970s Las Vegas, commenting on culture in a quest to reach the American dream. I am unsure if the author would have approved of my Hunter-inspired introduction, however, I have no doubts that he would have loved Marilyn’s bar in Broadbeach.
Visiting Marilyn’s Bar
Upon my first visit to Marilyn’s, I knew this would be a special experience. From first setting eyes on the 70’s inspired Las Vegas styling to being greeted with open arms, dining here would be much more than just a meal.
Although somewhat subdued, the venue successfully upholds a feeling akin to the book. You will find the pink and green colour hues, retro glasses and old school lamps typical of Las Vegas from that era. It successfully gives off that 70s feeling without feeling dated. More like an updated take on the time that brings a level of sophistication to the venue. This helps to provide a location that is both classy and casual, inviting a varied audience that is sure to enjoy the ambience.
Food at Marilyn’s Bar
My first visit was with a good friend, and we enjoyed a range of dips to start. I have high standards towards dips, and these were surpassed after trying Marilyn’s offerings. I have personally tried to make the perfect romesco dip at home. Although my effort was reasonable, the sauce they produced was next level. The kind of sauce that you would be happy with if you got it in the heart of Spain.
Although I am most accustomed to Chimichurri on steak, the mixture went well with bread and the tapenade was outstanding. I was also able to try the tostadas, with flavoursome pulled jalapeno chicken, the freshness of Pico de Galo, flavoursome cheese, and the crucial crunch of the fried tortilla.
Apart from those dishes, you will find a specially designed menu that embodies that Las Vegas vibe. A blend of smashed American burgers and tajin seasoned fries along with Mexican-styled favourites such as taquitos, grilled corn ribs or Chicharron.
Drinks at Marilyn’s bar
You will want to wash this down with a drink and I can highly recommend their Margaritas. Marilyn’s Bar puts their own spin on an Old Fashioned, infused with coffee and caramel. Another worthy choice. The cocktails are balanced perfectly and are lightly sweet, allowing all the nuances of the drink to come through.
Besides their cocktails, they have a fine range of tequila if you’re that way inclined. They also have a curated list of specific wines from Australia and abroad. Although their beer range may not be as extensive as some of the options covered in our beer lover’s guide to the Gold Coast, you will find a selection for most tastes.
Sitting down with the owner
Since my first visit, I had the opportunity to sit down one on one and chat with Alex, co-owner of the venue. Alex and his business partners toyed with a name for the venue yet decided upon the name of Marilyn’s. Alex mentioned that Marilyn Monroe was classy yet loved a good time, a feeling that emanated throughout their establishment. As previously mentioned, the venue is also influenced by Hunter S Thompsons’ “Fear And Loathing In Las Vegas” which came about when him and business partner Rupert were chatting about the film.
Alex has worked in fine dining as a chef at esteemed restaurants in London, Europe and Melbourne. He is also well-versed behind the bar. The creative drive and international experience of the team have led to a diverse food menu and some of the best cocktails on the coast.
I asked Alex what the future held for Marilyn’s and his eyes lit up. He explained that there will be a focus on live music and is looking to do a bartender competition soon. I asked him if we could expect any Lizard people (characters from Fear and Loathing in Las Vegas) and he said there could be anything in the future. There could be a fancy dress night or a wheel of fortune to spin.
Alex also has a passion for helping those in the hospitality industry and has plans for an online training platform to help bartenders. Be ready for some other big ideas by following them on social media.
From spending time at the bar as well as sitting down with Alex, I could see the dedication and love that had gone into the venue. As Hunter would say “Buy the ticket, take the ride” and come check out Marilyn’s Bar, one of Broadbeach’s best bars.
